Northwest Chocolate Festival


Thanks to my account with Living Social, I discovered a few weeks ago that the Northwest Chocolate Festival was happening this weekend at the Seattle convention center. I was ecstatic about the idea of eating dozens of chocolate samples and maybe learning a little about the chocolate making process, so of course I bought a ticket! 


It was a pretty neat event, with lots of talks and educational seminars about chocolate, as well as a big room with booths representing different chocolate vendors. 

FYI, the above photo is of the plant where chocolate "comes from" in original form!

My favorite vendor was Fran’s Chocolates, which was handing out the full-size salted caramel candies shown above. I’m pretty sure I went back for about 8 of their samples alone! ...Try not to judge me and my insatiable sweet tooth. Other notable samples I tasted were Divine chocolates and Theo chocolates, but there were also chocolate sauces, vegan chocolates, and international chocolates. Needless to say, I literally ate chocolate for lunch!

Easy Veggie Paella

Wow, it's been almost a week since my last post! I knew that the re-start of grad school would put a dent in my posting schedule, but it's still crazy how the days just fly by. On the upside, I just taught my first college English class and got the jitters out of my system! I have 22 students this quarter, so fingers crossed that we continue to mesh well together for the next 10 weeks.

In the food world, I am still fixated on this transition from summer to fall. It's truly an amazing time of year -- pumpkins are popping up at the supermarket, but the sun is still (mostly) shining! If you have the urge to cram veggies into your diet before the cold weather blows in, you should try this amazing vegetable paella. It's quite easy apart from buying and chopping a million veggies...and of course I added chorizo sausage for some extra kick.





Ingredients:
 
2 teaspoons olive oil
8 ounces Spanish chorizo sausage, cut into 1-inch pieces (optional)
2 cloves garlic, minced
1 cup marinated artichoke hearts, quartered
1 cup sliced yellow squash
1 cup baby squash or sliced zucchini
1 cup sliced carrots
1 bunch asparagus, ends trimmed, cut into 2-inch pieces
1/2 cup frozen green peas 
14-ounce can diced tomatoes
6 to 8 saffron threads
1/2 teaspoon paprika
2 bay leaves 
2 cups cooked rice
1/2 cup vegetable broth
1/4 cup chopped fresh parsley  
Salt and freshly ground black pepper

Directions:

1. Heat oil in a large paella pan or skillet over medium-high heat.
2. Add sausage and garlic and cook until done. 
3. Add artichokes, squash, zucchini, carrots, asparagus, peas, tomatoes, saffron, paprika, and bay leaves, bring to a simmer and cook 5 minutes. 
4. Add rice and broth and cook for 5 minutes, until liquid is absorbed. 
5. Remove from heat, remove bay leaves and stir in parsley. Season with salt and black pepper.

Strawberry Cream Biscuits


Summer seems to be slipping away and turning into fall up here in Seattle. We’ve had an amazingly sunny past few months, but today marked our first drizzly day in quite some time. Instead of giving into fall just yet, though, I wanted to post a fun and summery recipe for these Strawberry Cream Biscuits I found on Smitten Kitchen. They tasted delicious just out of the oven, and are basically a version of strawberry scones that can easily be eaten all by itself. I never knew this type of baked good could be so easy to make, but it was a cinch with the help of my trusted Kitchen-Aid!





Ingredients:

2 1/4 cups all-purpose flour
1 tablespoon baking powder
1/4 cup granulated sugar
1/2 teaspoon salt
6 tablespoons cold, unsalted butter
1 cup chopped very ripe strawberries (Each strawberry cut into 4 or more pieces, depending on size)
1 cup heavy cream

Directions:

1. Preheat oven to 425 degrees. Line a large baking sheet with parchment paper.
2. In the bottom of a large bowl, whisk flours, baking powder, sugar and salt together. 
3. Add butter, either by cutting it in with two knives or a pastry blender (you can also freeze the butter and grate it in on the large holes of a box grater), breaking it up until the mixture resembles a crumbly meal with tiny pea-sized bits of butter. 
4. Gently stir in the strawberries, so that they are coated in dry ingredient, then stir in heavy cream. (use a rubber spatula to gently lift and turn the ingredients over each other.) 
5. When you’ve mixed it in as best as you can with the spatula, go ahead and knead it once or twice in the bowl, to create one mass. Don't worry about getting the dough evenly mixed. It’s more important that the dough is not overworked.

6. Generously flour your counter. With as few movements as possible, transfer your dough to the counter, generously flour the top of it and with your hands or a rolling pin, gently roll or press the dough out to a 3/4-inch thickness. 
7. Cut into 2 1/2-inch circles with a floured biscuit cutter or top edge of a drinking glass (this is what I did!), pressing straight down and not twisting as you cut. 
8. Transfer scones to prepared baking sheet, leaving a couple inches between each.

Bake the scones for 12 to 15 minutes, until bronzed at the edges and the strawberry juices are trickling out of the biscuits in places. Cool in pan for a minute, then transfer to a cooling rack. Serve warm or at room temperature.

 I ate mine with a few extra strawberries and some whipped cream!

Kitchen Eye Candy

Whoa can I just start by saying that this week has been absolutely insane! I believe I mentioned that I was starting an orientation/training session for my teaching assistant position at the University of Washington, and boy is it exhausting! I have learned so much this week, from designing an assignment sequence to creating effective writing prompts to lesson planning, grading, and so much more.

My brain is definitely on overload from waking up at 7:00, getting home at 5:00, and doing homework/prep work until 10:30 p.m. I figured a little kitchen eye candy would be a way to get my brain out of the training-induced rut. All of the items below are sold by a beautiful home store called Terrain, and you can see for yourself what cute stuff they have for the kitchen, below.

Back from Honeymoonland

Ahhhh I am feeling good after an amazing week's honeymoon in Hawaii! As I mentioned before I left, we were visiting the Big Island. We stayed for 3 nights in a fancy resort called the Mauna Kea Beach Hotel, which I visited a few times when I was very young. My parents actually went there 30 years ago for their own honeymoon! Luckily, our family friend is a travel agent and got us a great deal, and the hotel manager gave us an additional upgrade to an ocean view room! The next place we stayed was the Puakea Ranch, an old ranch whose buildings have been converted to cute guesthouses (they still have horses and chickens!). 

We got back on Friday night at about 9:30 p.m. The next morning, I had to be on campus at 9:00 a.m. for my teaching assistant orientation. I'm getting ready to teach my first college English class, which begins in one week. Unfortunately, the start of school will mean that my blog posts will get a bit less regular and more sporadic. But I still intend to eat...and take pictures! Check out our honeymoon photos below and get jealous...

Island Time

Hello blog world! Stuart and I are jetting off tomorrow for a week in paradise. We are heading to the Big Island of Hawaii for our belated honeymoon. I can't wait to feel my toes in the sand, do some snorkeling, and sip on a rum-infused beverage!

Since we won't have steady access to internet while we are away, I will be taking a pause from blogging until we return on the 15th. I expect to have lots of tropical meals and sunset photos to share with you when we get back! Aloha for now...

Michou World Class Deli



After posting about Pike’s Place Market yesterday, I wanted to follow up with my favorite spot there to grab a bite to eat. Michou World Class Deli has a lot going for it, I must say! First off they have a wonderful selection – their main focus in panini sandwiches, but they also have pastas, salads, quiches, soups, and baked goods. Secondly, the prices are seriously amazing. You can get a huge delicious sandwich for about $5, and it certainly beats the sandwich chain Subway! You can also get half sandwiches or different lunch combinations.
 

Last time I stopped in, I got a half chicken caesar panini and a cup of the creamy cauliflower soup. The only downside it that there is limited seating in the tiny shop, but you can easily go eat closer to the waterfront and get some great views. 






Mmm, a panini grilled to perfection so it is thin and crunchy!
