I often feel that my
body is craving a superfood like kale, but have never really liked the way it
tastes (a bit leafy and bitter). However, I came across this recipe on a family
friend’s blog, i talk to food, and really liked it. The trick is that you let
the salad marinate with the dressing on it for a couple hours, making the kale moist
and flavorful. Plus it has avocado as a main ingredient, which obviously makes it a winning dish!
Ingredients:
3
cups torn kale
½
cup of cherry tomatoes sliced in half
3
tbsp thinly sliced red onion
1
ripe avocado
Dressing:
1
teaspoon honey
1
teaspoon red wine vinegar
2
tablespoons extra virgin olive oil
Juice
of half a lemon
Large
pinch of salt
I played around with
the dressing a bit, using regular balsamic vinegar instead of the red wine vinegar,
and added a splash of Brianna’s ginger mandarin dressing to add extra flavor.
